Lion’s Den converts organic mushrooms into super delicious umami Sauces, Spreads and Condiments. We realised that since becoming plant-based one of the key flavours we missed was Umami - the taste of savouriness or richness - so we are on the hunt to create tasty sauces that pack an umami punch to your dishes. After a kismet meeting with a Mushroom Man in Snowdon we realised that mushrooms are the future.
SUPER UMAMI
Exotic mushrooms, especially Shiitake, have loads of umami qualities. Umami is the 5th taste sense, known as savouriness, that gives certain foods a deep rich flavour that makes us crave for more.
Easy to Grow
Mushrooms are natural decomposers, the ultimate zero waste or circular system. We grow them in a low energy controlled environment in an urban setting meaning they are a planet positive food for the future.
NUTRITIONAL POWERS
Mushrooms are a brilliant source of Protein, Vitamin D, Fibre and other minerals and vital vitamins. We’re also looking into the exciting potential between umami and protein absorption.
Having won awards for sustainability and organic food at their pub, and two published cookbooks on Sustainability, Ollie and Lauren realised that we all had to eat more plant based foods. They realised that there are two key ideas to help us transition - 1). Great tasting vegetables. 2). UMAMI.
After an encounter with a Welsh Mushroom Man in Snowdon, they knew the future would be mushrooms.
